The fall season only means one thing: pumpkin! Not only as decoration for Halloween, but also as a healthy ingredient for many autumn recipes. I've decided to eat only pumpkin for 24 hours. Therefore I prepared pumpkin meals for breakfast, brunch, lunch, snacks, dinner and second snack. Take a look and share the recipes you like the most with your friends and family!
Breakfast with Pumpkin Omelette
Ingredients:
- two spoons of pumpkin puree
- two eggs
- 200g of green beans
- a few cubes of melty cheese
- onion and garlic
- pepper and salt
- chives leaves
Preparation:
Enjoy this homemade omelet by adding into your mix of eggs and cheese also some pumpkin puree. Make sure you don't add more than two spoons, as it might get too watery and ruin the texture. If you want more pumpkin, you can add it later as a filling. Don't forget the seasoning and some extra greens to complete your plate.
Easy Pumpkin Soup for Lunch
Ingredients:
- one pumpkin
- onion and garlic
- butter
- flour
- pepper and salt
- cream
Preparation:
You want to start your soup by caramelizing your onions and garlic. After they reached a beautiful brownish color, add butter and flour. The flour will help you create a fine texture for the next step. Now add pumpkin cubes and water and let everything boil for at least 15 mins. Now that the pumpkin is tender, all you have to do is use a blender and create that beautiful creamy consistency. Let it boil for other 10 minutes. Add seasoning and cream if you like. Enjoy your meal!
Creamy Pumpkin Pasta
Ingredients:
- pumpkin puree
- 200g pasta
- butter
- onion and garlic
- pepper and salt
- parmesan cheese
Preparation:
The tricky part of this recipe is creating a soft and creamy pumpkin sauce. First, you have to caramelize the onion and the garlic in some oil. Now add the pumpkin puree. In order to do it, I suggest you blend some pumpkin cubes after you let them in the oven till they become tender. Boil the pasta in the water and add your pumpkin cream. You can finish by seasoning with parmesan.
Roasted Stuffed Pumpkin
Ingredients:
- one pumpkin
- couscous
- soja beans
- butter
- onion and garlic
- pepper and salt
- rosmarin
Preparation:
Cut the top of one pumpkin and remove the inner part with the seeds. Roast it in the oven for around 45 mins at 180°C. In the meanwhile, boil the couscous and add some greens (like these soja beans for example). Season it with salt, pepper and some rosmarin. The last step is to fill up the pumpkin with the couscous. I suggest you to consume it fast, it taste better when hot.
Indian Pumpkin Curry
Ingredients:
- one pumpkin
- rice
- lentils
- cashews
- butter
- onion and garlic
- pepper and salt
- curry spices
Preparation:
Caramelize some onion and garlic. Now add pumpkin cubes and lentils for a few minutes. I normally don't prepare the curry powder mix myself because there are many options in the supermarket that are still healthy and tasty. Add a few spoons of powder and mix everything with coconut milk. This will give the curry a great consistency. While the curry is getting ready, boil some rice and serve them all together.
Pumpkin Yogurt Snack
Ingredients:
- yogurt
- two spoons of pumpkin puree
- chia seeds
- cinnamon
Preparation:
You will be surprised to discover how easy it is to create a healthy and tasty snack. All you need to do is mix some yogurt with some pumpkin puree. Now add some of the chia seeds and wait at least 20 mins (the more, the better). The chia seeds, in contact with the yogurt, will get a whole new consistency. Very yummy. Don't forget to use cinnamon to enhance the autumn vibes!
Bonus: Pumpkin Crepes Recipe
With the pumpkin leftovers, we decided to make some crepes filled with pumpkin puree! It was very easy to do! You just need to make some simple crepes with water, flour and egg and filled them with pumpkin puree. It's going to fill your stomach and make you happy :) No need to waste any pumpkin! :)
